STEP 1:
Add 16-20 tsp of tea to the infuser in your 2-quart pitcher (about 1-2 tsp of tea per 8 ounces of water). Fill the pitcher 1/2 full with hot water (leaving room for ice) or fill it entirely if you plan to place it in the fridge to chill.
Remember: different teas call for different steeping temperatures and times. Delicate teas like green, white, and yerba mate like to be steeped in less hot water for a short time (about 180 degrees for 3 to 5 minutes), while herbals and pu erh tea can withstand hotter temperatures and longer steep times without becoming bitter (around 212֯ for up to 10 minutes).
STEP 2:
If you are adding honey, add it while the water is still hot so it dissolves evenly. Then remove your infuser from the pitcher.
STEP 3:
Add ice and shake the pitcher to chill the tea. Use ice made from filtered water for the best results.
Or, simply place the pitcher in your refrigerator to chill for a few hours.
