Over a thousand years ago, tea leaves were being sold and shipped in tightly compressed bricks from their origin, the Yunnan province, to the mountains of Tibet. Compressing the loose tea into bricks made the tea more compact and easier to transport, but it accidentally did something pretty magical - it caused a bacterial fermentation that altered the tea itself. And so pu erh was born.
