A legend shared by many cultures in the Pacific.

Once upon a time,Ā a little girl had a pet eel. As the girl grew up she became more and more distant from her pet and lost interest in caring for it. She released it into the river in the jungle. One day, as she was bathing in the river, she spotted the eel staring at her. She was so surprised and angry to see the eel that she killed it! As the eel was dying, it said to her Ā "Although you hate me now, one day you will kiss me and thank me.ā€ And from where the eel was buried, there grew a coconut tree, with a long trunk, just like the eelā€™s long body. As time passed, a drought swept through the island, but the coconut tree stood tall. The villagers ate the coconuts as their last resource, and as they did, they noticed 3 circles on the coconutā€™s shell. Those 3 circles looked just like the 2 eyes and mouth of the eel! From one of the holes, they put their lips and drank the life saving coconut water, including the young woman, which fulfilled the eelā€™s prophecy.

SCIENCE TELLS US

  • Although coconut meat is high in fat, it also contains MCTs, which are metabolized differently than other types of fat. The meat also provides carbs and protein, along with many essential minerals, such as manganese, copper, iron, and selenium.
  • Some studies suggest that coconut oil could reduce the growth of several different types of bacteria.
  • Coconuts contain polyphenol antioxidants that can help protect your cells from damage, which may aid in the prevention of chronic disease.
