This Mexican street corn makes the perfect side or appetizer, is easy to make, and is pretty darn delicious. With traditional street corn toppings like butter, mayo, lime, cilantro, cotija cheese, and a chile-lime rub, this recipe is savory, sweet, zingy, and subtly spicy!
Made with New Mexican chile, chipotle pepper, lime juice powder, cilantro, oregano, garlic, and cumin.
Chile Lime Rub
INGREDIENTS:
  • corn ears
  • butter
  • mayo
  • fresh squeezed lime
  • cojita cheese
  • chopped cilantro
  • a few dashes of Chile Lime Rub
INSTRUCTIONS:
  1. Shuck corn and cook on the grill at 375 for 12 to 15 minutes, or until corn reaches desired color and consistency.
  2. Set up a toppings bar with butter, mayo, cilantro, lime, cotija cheese (or queso fresco) and Chile Lime Rub.
