Prickly Pear Pink Champagne Floats

INGREDIENTS
∙ 3 cups of water ∙
∙ 1/2 tsp unflavored gelatin ∙
∙ 8 tsp Prickly Pear tea ∙
∙ 4 Tbsp Sunflower Honey ∙
∙ 1 cup of pink champagne ∙
∙ fresh raspberries or strawberries for garnish ∙
INSTRUCTIONS
- Place water and gelatin in a saucepan or Takeya Pitcher, let dissolve for 5 minutes. Add Prickly Pear tea, and diffuse in hot, but not boiling water.
- Add Sunflower honey. Stir until dissolved.
- Freeze mixture in an ice-cream maker according to the manufacturer's directions or place mixture in a popsicle mold! Let mixture set until slightly firm but not frozen solid.
- Place a scoop of sorbet in a large wine glass, and pour champagne over and garnish with strawberries or raspberries!
Sip and enjoy or eat with a spoon!
PRO TIP
Use grapefruit or watermelon juice as an alternative to champagne to make this a kid friendly recipe!
