Ingredients:
- 1 lb Ground Lamb
- 3 ½ tsp lemon juice, reserve ½ tsp
- 1 ½ - 2 tbsp OBTC GREEK SEASONING
- ½ c fat-free plain yogurt
- ½ cucumber, seeded and chopped
- ¼ tsp mint, chopped
- ½ tsp dill weed, chopped
- 4 whole wheat pita
- 2 c red leaf lettuce, shredded
- 1 medium tomato, chopped
- ½ c red onion, chopped
- ½ c reduced-fat crumbled feta cheese
Instructions:
- Heat a skillet on medium heat.
- Add 3 tsp lemon juice and Greek Seasoning to ground lamb and blend well; let stand for 5 minutes.
- Combine yogurt, ½ teaspoon of lemon juice, cucumber, mint and dill in a bowl and set aside.
- Cook lamb in skillet over medium heat until brown.
- Microwave pita bread just before serving to soften.
- Cut the pitas in half.
- Fill pitas with browned lamb, then top with yogurt mixture, lettuce, onion and feta cheese
