GREEK LAMB GYROS


(Cook and Prep Time: 40 minutes)

Ingredients:
  • 1 lb Ground Lamb
  • 3 ½ tsp lemon juice, reserve ½ tsp
  • 1 ½ - 2 tbsp OBTC GREEK SEASONING
  • ½ c fat-free plain yogurt
  • ½ cucumber, seeded and chopped
  • ¼ tsp mint, chopped
  • ½ tsp dill weed, chopped
  • 4 whole wheat pita
  • 2 c red leaf lettuce, shredded
  • 1 medium tomato, chopped
  • ½ c red onion, chopped
  • ½ c reduced-fat crumbled feta cheese

Instructions:

  1. Heat a skillet on medium heat.
  2. Add 3 tsp lemon juice and Greek Seasoning to ground lamb and blend well; let stand for 5 minutes.
  3. Combine yogurt, ½ teaspoon of lemon juice, cucumber, mint and dill in a bowl and set aside.
  4. Cook lamb in skillet over medium heat until brown.
  5. Microwave pita bread just before serving to soften.
  6. Cut the pitas in half.
  7. Fill pitas with browned lamb, then top with yogurt mixture, lettuce, onion and feta cheese
